2 (about 1 lb each) live mud crab, cleaned and cut into pieces
1 tbsp belacan ()
1 egg, beaten
5 red chilies, chopped
6 cloves garlic
2 tbsp ginger, grated
3 shallots
1 cup tomato passata
1/2 cup sweet chili sauce
2 tbsp ketchup
1 tbsp cornstarch
1/4 cup
1 tsp sugar
to taste salt
Instructions

Blend the chilies, garlic, ginger and shallots into a rough paste. Whisk the cornstarch with a little water and set aside.

Heat the oil in a wok and fry the chili paste with the belacan until fragrant and the oil turns red.

Stir in the tomato passata, sweet chili sauce, ketchup, sugar and a cup of water and bring to a simmer.

Add the crab pieces, cover, and cook 8 to 10 minutes until the shells turn bright red and the meat is cooked, turning them in the sauce.

Cook the crab right in the sauce so it takes on flavour and lends its brininess back.

Stir in the cornstarch slurry to thicken, then pour the beaten egg in a thin stream and drag a fork through to make ribbons.

Season, transfer to a platter, and serve with steamed or fried mantou buns to mop the sauce.

It descends from Hainan's Wenchang chicken, brought over by Hainanese migrants and reworked with Cantonese technique, so Singapore and Malaysia each have a case and neither has a clinching one. The rice cooked in the poaching stock is the part nobody argues about.
