4 whole river trout, cleaned
8 slices fatty ham, sliced
1/2 cup all-purpose flour, for dusting
3 tbsp oil or mild lard
to taste salt and pepper
Instructions

Rinse the trout, pat dry, and season inside and out with salt and pepper.

Dust the trout all over in flour, shaking off the excess.

Fry the trout in the hot oil or fat, turning once, until golden and just cooked through, then set aside on a plate.
