8 small fillets flying fish fillets (or any firm white fish), deboned
2 lime, juiced
3 tbsp Bajan green seasoning (onion, garlic, thyme, marjoram, parsley, and , blended)
2 egg, beaten
1 cup fine breadcrumbs
1/2 cup all-purpose flour
1 tsp paprika
to taste salt
to taste black pepper
1/2 cup vegetable oil, for shallow frying

Soak the fillets briefly in the lime juice and a little water, then drain and pat dry.

Patting the marinated fish dry before it hits the crumbs is what gives a crisp golden crust; wet fish steams and goes pale and soggy.

Rub the Bajan green seasoning into the flesh of each fillet and leave to marinate at least 30 minutes, ideally an hour or more.

Set up a coating station: the beaten egg in one dish, and the breadcrumbs mixed with the flour, paprika, salt, and black pepper in another.

Dip each fillet in the egg, then press firmly into the crumb mixture until fully coated.

Heat a shallow layer of oil in a frying pan over medium-high heat and fry the fillets a couple of minutes each side until golden and just cooked through. Drain and serve with lime.
