1/2 lb shrimp, peeled

Instructions

Season the fish and shrimp with the lime juice, salt, and pepper and set aside.

Soften the onion, garlic, and tomato in the oil, then stir in the annatto until the oil turns deep orange.

Pour in the coconut milk and a couple of cups of water, add the culantro and whole habanero, and bring to a gentle simmer without letting it boil hard.

Coconut milk splits if boiled hard, so keep it at a bare simmer and stir gently; the layered pot is best left barely stirred once the fish is in.

Add the yuca and green plantain first and cook about 15 minutes, then the ripe plantain for 10 minutes more, until the roots are nearly tender.

Lay the fish and shrimp on top and simmer 8 to 10 minutes until the fish flakes and the shrimp turn pink. Lift out the pepper and serve with rice.
