Ingredients
Serves 4
8 oz salt cod (saltfish), soaked and flaked
2.5 cups all-purpose flour (for bakes)
1 onion
1 tomato
1 sweet pepper
1 tsp thyme
3 cloves garlic
to taste hot pepper
2 tsp baking powder
3/4 cup water
3 cups neutral oil, for frying
Instructions

Soak and boil the saltfish to reduce the salt, then drain and flake it.

Make a soft dough with the flour, baking powder, salt, and water; shape into rounds and fry until puffed and golden.

Sauté the onion, garlic, pepper, and thyme in oil, add the tomato and saltfish, and cook a few minutes.

Split the hot bakes and stuff with the sautéed saltfish to serve.
