Fish and chips is Britain's national dish, brought together in the mid-nineteenth century when fried fish, a Jewish tradition, met the fried potato. By the Victorian era, chippies fed the industrial working class, and the pairing became an institution.
The fish, usually cod or haddock, is dipped in a light batter (often made with beer for extra crispness) and deep-fried until golden and crackling over flaky flesh. Alongside come thick-cut chips, fluffy inside, and it is all doused in salt and malt vinegar, traditionally wrapped in paper and eaten by the sea.

Dietary labels are a cooking guide, not allergen-safety advice. We track dairy, egg, gluten, tree nuts and peanuts (we count coconut as a tree nut, following FDA labeling), fish, and shellfish; we do not screen for sesame, soy, mustard, celery, or sulphites. If you have a food allergy, read the label on every product you use, and note that a kitchen can cross-contaminate in ways a recipe cannot control.
Ingredients
Serves 4
4 white fish fillets (cod or haddock)
1 1/2 cups flour
1 cup cold beer
2 lb large potatoes, cut into thick chips
to taste malt vinegar, to serve
to taste salt
for frying oil, for frying
Instructions
1
Fry the thick-cut chips first in medium oil until soft, then set aside to fry again hotter later.
✎ Chef’s note
Fry the chips twice: once gently to cook through, once hot to crisp. That double fry is the secret to fluffy insides and a crunchy shell.
2
Whisk the flour and cold beer into a light batter.
3
Dip the fish in the batter and deep-fry until golden and crisp, then drain.
4
Fry the chips a second time until golden, then salt everything and serve with vinegar.
British chippie tradition.

Cornwall. The other Cornish industry was fish. Pilchards were taken in huge seine nets worked from the shore, pressed in cellars for their oil and packed in salt for export to Catholic southern Europe, a trade that built villages along the whole coast before the shoals thinned. The boats now land crab, mackerel and mussels instead.

United Kingdom. The country's most-cited modern dish carries a claim rather than a fact: chicken tikka masala's invention is attributed to Ali Ahmed Aslam at the Shish Mahal in Glasgow, an origin story that has never been settled. What is beyond argument is the scale of the change, with South Asian cooking now so embedded that its vocabulary is ordinary British English.
🌍
Europe. A surprising amount of European cooking is under five hundred years old. Tomatoes, potatoes, peppers, maize, beans and chocolate all crossed from the Americas after 1492, and none of them was trusted quickly: the potato took most of the eighteenth century to be accepted as food rather than animal fodder across much of the north.
The story behind this dish is up top, worth a read while the pot works.
