Ingredients
Serves 4
1.5 lb firm white fish, cut in chunks
1 can (14 oz) coconut milk
1 onion
4 cloves garlic
1 tbsp ginger
1 tbsp curry powder
1 tsp turmeric
a sprig curry leaves
1 tomato
1 lime
1 chili
Instructions

Soften the onion, garlic, and ginger, then bloom the curry powder, turmeric, and curry leaves.

Add the tomato and cook to a paste.

Pour in the coconut milk and simmer into a fragrant sauce.

Add the fish (or hearts of palm and mushrooms) and poach gently until cooked.

Finish with lime and chili and serve over rice.
