Ingredients
Serves 4 —

1.5 lb fresh tuna, cut in chunks
•
1 can (14 oz) coconut milk
•
1 onion
•
4 cloves garlic
•
1 tbsp ginger
•
a sprig curry leaves
•
1 leaf pandan
•
to taste dried chili
•
1 tsp turmeric
•
1 tsp cumin
•
1 lime
Instructions

Soften the onion, garlic, and ginger with the curry leaves and pandan.

Add the turmeric, cumin, and chili and cook until fragrant.

Pour in the coconut milk and bring to a gentle simmer.

Add the tuna (or hearts of palm and mushrooms) and cook until just done.

Finish with lime and serve with rice or roshi.
