2 cups long-grain rice, rinsed until the water runs clear
3 cups pumpkin (calabaza), peeled and diced
1 1/2 cups
1 onion, chopped
3 cloves garlic, minced
3 , chopped
4 sprigs fresh thyme
1 whole pepper
2 tbsp oil
Instructions

Soften the onion, garlic and scallions in the oil, then add the pumpkin, cut into half-inch dice, and the thyme.

Cut the pumpkin small. In big chunks it is still hard when the rice is done; in half-inch dice it collapses into the grain in the same twenty minutes, which is the whole point of the dish. Calabaza is the right squash, but kabocha or butternut stand in well.

Pour in the coconut milk and 1 1/2 cups water and bring to a simmer, then lay the whole scotch bonnet on top.

Stir in the rice, cover, and cook on low until the liquid is absorbed and the pumpkin has melted into the rice, about 20 minutes.

Leave the scotch bonnet whole and remove it at the end. It should scent the pot, not burst and overwhelm it.

Discard the pepper, fluff gently so the pumpkin streaks through, and serve.
