2 lb pork shoulder, in 1-inch cubes
10 oz mushrooms, sliced
2 large onions, thinly sliced
4 cloves garlic, minced
1 tbsp sweet paprika
2 tbsp olive oil
1 cup
to taste salt and pepper
a little parsley, to garnish
Instructions

Brown the pork cubes in the olive oil in batches, then set aside.

Soften the onions in the same pot until golden, add the garlic, then the mushrooms and cook until they release their moisture and brown.

Return the meat, stir in the paprika off the heat, and season with salt and pepper.

Stir the paprika in off the heat so it colours the sauce without burning.

Add the stock so it comes halfway up the meat, transfer to a clay pot or lidded dish, cover, and bake at 320F for about 2 hours until the pork is very tender.

Rest a few minutes, scatter with parsley, and serve with bread or rice.
