Tavë me presh, leek bake, is a staple of the Kosovar and wider Albanian winter table, turning the humble leek into something rich and comforting. The leeks are sliced and softened until they start to caramelise and turn sweet, then layered with minced meat, most traditionally lamb, cooked down with onion, tomato and paprika.
Baked together in a single tavë (dish) until the top browns, it needs little more than crusty bread or a spoon of mashed potato alongside. The natural sweetness of the leeks against the paprika-spiced meat is the whole appeal.

Ingredients
US
Metric
Serves 4
2 lb leeks, sliced
1 lb ground lamb or beef
1 onion, chopped
2 cloves garlic, minced
2 tbsp tomato paste
1 tbsp sweet paprika
1/4 cup olive oil
1 cup
to taste salt and pepper
Instructions
1
Fry the sliced leeks in some of the olive oil over medium heat until softened and starting to caramelise, then spread them in a baking dish.
2
In the same pan, soften the onion and garlic, add the minced meat and brown it, breaking it up.
✎ Chef’s note
Let the leeks take on some colour first: their sweetness is what balances the paprika.
3
Stir in the tomato paste, paprika, salt, pepper and the stock and simmer 5 minutes.
4
Pour the meat mixture over the leeks and stir gently to combine.
5
Bake at 375F for about 1 hour until bubbling and browned on top. Serve hot with bread.
Kosovar/Albanian tradition.

Pristina. Pristina is famed for flija, a pastry built layer by layer under a heated lid until it stacks into dozens of thin crepes, brushed with cream. Kosovar cooking is Balkan and Ottoman: peppers, pite pastries, grilled meat, and abundant yogurt.

Kosovo. It is not Kosovo's alone: the same dish is made in Albania, in northern Montenegro and in North Macedonia, where it is called gjomleze. The sac that cooks it is the same tool as the Croatian peka and the Montenegrin sac, which is a good reminder that the Balkans share equipment as much as recipes. Burek here means the pastry generally rather than one filling.

Europe. European cooking is built on the land and the seasons, wheat, butter, and cured pork in the north; olive oil, tomatoes, and seafood around the Mediterranean; preserved vegetables and hearty stews through long winters. Centuries of peasant tradition, guild craft, and royal courts refined techniques from French mother sauces to Italian fresh pasta and Central European baking. Regional identity runs remarkably deep, with a single dish often changing from one valley to the next.
The story behind this dish is up top, worth a read while the pot works.
