Flija is a labor of love and celebration in the Kosovar highlands, built one crepe-thin layer at a time. Batter is spooned in rings and cooked under a saç lid heaped with embers, then more batter added over and over until dozens of buttery layers stack into a great sunburst — traditionally made by women together over hours.

Ingredients
Serves 8
4 cups flour
1 cup butter, melted (for brushing)
2 eggs
4 cups water
1 tsp salt
1 cup + to taste sour cream and honey, to serve
Instructions

Whisk the flour, eggs (or water), water, and salt into a thin, pourable batter.

Spoon concentric rings of batter into a buttered pan or saç and brush with melted butter.

Cook under a lid topped with embers (or under a broiler) until set, then spoon a new ring layer over the top.

Repeat, brushing with butter each time, building many thin layers over 1–2 hours.

Cut into wedges and serve warm with sour cream and honey.
