The fluffy buttermilk pancake is a pillar of the American weekend breakfast, and studded with blueberries it becomes an icon of the country's diners and home griddles alike. It reflects a national love of a generous, comforting morning stack.
Buttermilk is the key: its acidity reacts with baking soda to give the batter its signature lift, producing pancakes that are tall, tender, and tangy. Fresh or wild blueberries are folded in or scattered on as they cook, bursting into sweet-tart pockets.
Served in a tall stack with butter melting between the layers and real maple syrup flooding over the top, they are pure weekend indulgence. Blueberry buttermilk pancakes are Americana on a plate, the taste of an unhurried Saturday morning.

Dietary labels are a cooking guide, not allergen-safety advice. We track dairy, egg, gluten, tree nuts and peanuts (we count coconut as a tree nut, following FDA labeling), fish, and shellfish; we do not screen for sesame, soy, mustard, celery, or sulphites. Ingredients
US
Metric
Serves 4
1.5 cups all-purpose flour
1.5 cups buttermilk
1 egg
1 cup blueberries
2 tbsp sugar
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp ground cinnamon
3 tbsp butter, for the pan and to serve
1/2 cup maple syrup, to serve
Instructions
1
Whisk the flour, sugar, baking powder, baking soda, cinnamon and a pinch of salt in a bowl.
✎ Chef’s note
The soda is there for the buttermilk. Buttermilk is acidic, and the acid needs something to react with; that reaction is what makes buttermilk pancakes lighter than milk ones as well as tangier.
2
In another bowl beat the buttermilk, egg (or flax) and 2 tbsp melted butter, then fold into the dry just until lumpy.
✎ Chef’s note
Lumpy is the target, not smooth. Beat the batter until it looks nice and the gluten develops and you get flat, rubbery pancakes.
3
Pour rounds onto a buttered griddle, scatter blueberries over each, and cook until the bubbles on top stop closing over again.
✎ Chef’s note
Berries onto the poured round rather than stirred into the bowl. Folded through the batter they sink, burst and turn the whole thing grey.
4
Flip once and cook until golden, then stack and serve with butter and plenty of maple syrup.
✎ Chef’s note
One flip only, and do not press down on them. Every press squeezes out the air the leavening just put in.
New England diner and home tradition.

New England (Massachusetts). New England is rocky coast and cold water, and its clam chowder, thick with potato, salt pork, and cream, is defended fiercely against all variations. Lobster rolls, baked beans, cranberries, and maple carry the rest of the regional table.
🗺️
United States. American cooking is regional and migration-shaped, Lowcountry shrimp and grits, Tex-Mex, New England seafood, Cajun gumbo, and Californian produce. Indigenous, African, European, Latin, and Asian traditions collide into a constantly reinventing national table.

North America. Almost every regional cooking here records who arrived and on what terms. Enslaved West Africans brought rice, okra, black-eyed peas and the techniques behind Lowcountry and Creole food; Chinese railway labour and later Italian, Jewish, Mexican and Vietnamese arrivals built the way the cities eat; and Indigenous foodways sit underneath all of it.
The story behind this dish is up top, worth a read while the pot works.
