1 lb beef chuck or shin, cut in cubes
1 lb pork shoulder, cut in cubes
2 yellow onions, quartered
2 carrots, cut in chunks
3 bay leaves
10 whole allspice berries
10 black peppercorns
2 tsp salt
to cover water
as needed boiled potatoes and lingonberry jam, to serve
Instructions

Heat the oven to 300F (150C).

Layer the beef, pork, onion and carrot in a heavy lidded pot, scattering the bay, allspice, peppercorns and salt between the layers.

Pour in enough cold water to just cover the meat and put the lid on.

Bake, undisturbed, for about 3 hours, until the meat is fork-tender and the broth is dark, checking once that there is still enough liquid.

Taste the broth and adjust the salt.

Serve in bowls with boiled or mashed potatoes and a spoon of lingonberry jam.
