2 cups dried whole green peas or split peas, soaked overnight
1 (about 1.5 lb) smoked ham hock, bone-in
1 large onion
1 carrot, diced (optional)
1 tsp dried marjoram
2 bay leaf
8 cups water
to taste salt and pepper
2 tbsp strong mustard, to serve
Instructions

Drain the soaked peas. Put them in a large pot with the ham hock, the whole onion and the bay, and cover with the water.

Bring to a boil, skimming off the foam, then reduce to a low simmer.

Do not salt yet; salt added early keeps the peas from softening.

Simmer gently, partly covered, for about 1.5 to 2 hours, stirring now and then, until the peas break down into a thick soup and the meat is tender. Add the carrot and marjoram partway through.

Lift out the ham hock, discard skin and bone, shred the meat and return it to the pot; remove the onion and bay.

Mash some of the peas against the side of the pot for a thicker texture, then season with salt and pepper.

Serve hot with strong mustard to stir in at the table, and dark rye bread on the side.
