Village chicken, or nkuku, is the special-occasion meat of Zambia, a free-range bird firmer and more flavourful than any farmed one. It is first boiled, then browned in its own rendered fat with no added oil, and finally simmered in a light gravy of onion and tomato.
Reserved for weddings, homecomings and honoured guests, it is eaten with nshima, the thick maize meal that anchors nearly every Zambian meal. Cooks keep the seasoning gentle so the chicken's own flavour stays front and centre.

Dietary labels are a cooking guide, not allergen-safety advice. Ingredients
Serves 4
1.5 kg bone-in chicken pieces
1 onion, chopped
2 tomatoes, chopped
2 cloves garlic, minced
1/2 tsp curry powder
1 tbsp
to taste salt
Instructions
1
Put the chicken (or jackfruit and chickpeas) in a pot with salt and a little water, cover, and boil until nearly tender.
2
Let the water cook off so the chicken browns in its own fat, adding the oil only if the pot is dry.
✎ Chef’s note
Let the chicken brown in the rendered fat for deep flavour before the gravy goes in.
3
Add the onion, garlic and tomatoes and cook until they collapse into a gravy.
4
Stir in the curry powder and a splash of water and simmer, covered, until tender, then serve with nshima.

Lusaka. Ifisashi names a method rather than one leaf. Greens go into a sauce of ground peanut, and which greens depends on the season and the garden: pumpkin leaves, cassava leaves, sweet potato leaves, rape or okra leaves all qualify. Ifisashi is the Bemba name; Chinyanja speakers call it visashi.
🗺️
Zambia. Zambia's food centers on nshima, a stiff maize porridge eaten with relishes of greens, beans, groundnut, or dried fish (kapenta). Hearty and communal, it's shaped by the land and the pounding of the mortar.
🌍
Africa. Much of what reads as timeless African cooking is younger than the Atlantic crossings. Maize, cassava, groundnut, chilli and tomato all arrived from the Americas after 1500 and pushed older crops aside; millet, sorghum, teff, yam and fonio are the ones that were already here, and the map still shows the join.
The story behind this dish is up top, worth a read while the pot works.
