The savory version, made without sugar, is served as a side to whole baked reef fish, but the sweet one is a dessert in its own right, cut into squares and shared at weddings, church gatherings and holidays.

Honiara. Slippery cabbage is aibika, and the slipperiness is its own mucilage, which thickens a coconut milk sauce without anything else being added to it. The motu, the stone-lined earth oven, also exists in miniature: hot stones dropped straight into a covered pot of cabbage and coconut milk.
🗺️
Solomon Islands. Solomon Islands cuisine is Melanesian and root-crop-based, taro, sweet potato, and cassava with fresh fish and 'slippery cabbage' greens, cooked in coconut milk or the earth oven. The reef and garden feed the islands.

Oceania. The staple crops here were carried on purpose. Lapita voyagers moving east from roughly three thousand years ago brought taro, yam, banana, breadfruit and coconut with them along with pigs and chickens, because most of the islands they settled had almost nothing edible growing on them. The earth oven travelled too, as umu, imu, hangi, lovo, mumu, motu and um.
The story behind this dish is up top, worth a read while the pot works.
