1 cup cooked mashed pumpkin, cooled
2.5 cups self-raising flour
2 tbsp butter, softened
3 tbsp sugar
1 egg
2-4 tbsp milk (as needed)
1 pinch of salt
Instructions

Cream the butter and sugar; beat in the egg (or flax), then the mashed pumpkin.

Fold in the flour and salt with a light hand, adding milk only if the dough is dry, soft, barely-mixed dough makes tall scones.

Pat out 1-inch thick on a floured board and cut rounds without twisting the cutter.

Bake close together on a hot tray at 425°F for 12-15 minutes until risen and golden.
