Ingredients
Serves 4
1.5 lbs ground beef
1 sheet each shortcrust pastry (base) + puff pastry (lids)
1 onion, chopped
2 cloves garlic, minced
1.5 cups beef stock
2 tbsp flour (to thicken the gravy)
1 tbsp Worcestershire sauce
1 tbsp tomato paste
1 tbsp soy sauce
1 egg, beaten (to glaze)
a squeeze per pie tomato ketchup, to serve — mandatory
Instructions

Brown the beef (or plant mince and mushrooms) with the onion and garlic.

Stir in the flour, then the stock, Worcestershire, tomato paste, and soy; simmer to a thick, glossy gravy. Cool completely — hot filling makes soggy pastry.

Line pie tins or a muffin tin with shortcrust; fill with the cold beef gravy.

Top with puff pastry lids, crimp, cut a steam vent, and brush with egg (or plant milk).

Bake at 400°F for 30 minutes until deep gold and puffed. Eat hot in one hand with a squeeze of ketchup — pastry burns and all, that’s the experience.
