2 tbsp butter

a handful chives
•
to taste salt
•
to taste black pepper

for 2 fresh bread, to serve
Instructions

Melt the butter (or oil) in a pan over low heat.

Pour in the beaten eggs (or tofu).

Stir slowly and gently until softly set and still creamy.

Season with salt, pepper, and chives.

Serve at once with fresh bread.
