The lobster roll is the taste of a New England summer, sold from clam shacks and roadside stands all along the coast from Connecticut to Maine. At its best it is almost aggressively simple: fresh lobster meat and little else, so the sweetness of the shellfish leads.
There are two churches. The Maine style, the one most people picture, dresses cold lobster in a light mayonnaise with maybe a little celery and lemon. The Connecticut style skips the mayo entirely for warm lobster and melted butter. Both agree on the vessel: a top-split hot dog bun, buttered on the sides and griddled golden.
It is a luxury that somehow still feels like casual seaside food, eaten at a picnic table with a paper napkin and a bag of chips, the reward for a summer drive up the coast.

Ingredients
Serves 4
1 lb cooked lobster meat, chunked
1/3 cup mayonnaise
1 stalk celery, finely diced
1/2 lemon, juiced
2 tbsp chives, chopped
4 top-split hot dog buns
2 tbsp butter, for the buns
to taste salt and pepper
Instructions
1
Cut the lobster into large bite-size pieces, toss it while still warm with just a few teaspoons of mayonnaise per pound, then tip it into a sieve set over a bowl and refrigerate an hour so the excess drips away.
✎ Chef’s note
Dressing it warm and then letting it drain is the trick worth stealing: it leaves the thinnest possible coating clinging to every piece rather than a mayonnaise salad. Just enough to gloss the meat, so the sweet lobster leads and does not drown. Leave the claw meat whole if you can.
2
Toss the drained lobster with the celery, chives and a squeeze of lemon, and season.
3
Butter the flat sides of the top-split buns generously and toast them slowly in a skillet over medium-low heat until deep golden on both sides.
✎ Chef’s note
A top-split white-bread bun is not negotiable; a side-split one has crust where the butter needs to go. Toast it slowly in plenty of butter, because the contrast of cold lobster against a warm buttery bun is the entire point of the sandwich.
4
Pile the lobster salad into the toasted buns.
5
Pile the cold lobster into the warm buns, finish with a little more chive, and serve at once with pickles and chips.
✎ Chef’s note
This is the Maine style, cold and mayonnaise-dressed. The Connecticut version, warm lobster in melted butter with no mayonnaise at all, is a different sandwich rather than a variation.
New England clam-shack tradition.

New England (Massachusetts). New England is rocky coast and cold water, and its clam chowder, thick with potato, salt pork, and cream, is defended fiercely against all variations. Lobster rolls, baked beans, cranberries, and maple carry the rest of the regional table.
🗺️
United States. American cooking is regional and migration-shaped, Lowcountry shrimp and grits, Tex-Mex, New England seafood, Cajun gumbo, and Californian produce. Indigenous, African, European, Latin, and Asian traditions collide into a constantly reinventing national table.
🌍
North America. The most consequential technique on this continent is nixtamalisation, cooking maize with lime or wood ash. It loosens the skins, makes the dough that becomes tortillas and tamales, and frees up niacin the body cannot otherwise absorb, which is why maize spread around the world without the technique and took pellagra with it.
The story behind this dish is up top, worth a read while the pot works.
