The Bermuda fish sandwich is the island's most famous lunch, an overstuffed handful sold from lunch counters and roadside spots, and the subject of passionate local loyalty over who makes the best one. It is Bermudian home cooking at its finest.
The signature detail is the bread: soft, slightly sweet raisin bread, which sounds unlikely against fried fish but works beautifully, the faint sweetness playing off the savoury, crisp fillet. Between the slices go a golden fried piece of local fish, coleslaw, tartar sauce, and a shake of hot pepper sauce.
Enormous and messy, it is weekend food, the reward after a beach morning or a Saturday errand. Bermudians will tell you it must be on raisin bread, and one bite of the sweet-and-savoury combination usually wins over any doubter.

Ingredients
US
Metric
Serves 4
1 1/2 lb firm white fish fillets
1 cup flour, for dredging
8 slices raisin bread
1/2 cup tartar sauce
3 cups cabbage, shredded for slaw
1 large tomato, sliced
to taste hot pepper sauce
for frying oil, for frying
Instructions
1
Season and dredge the fish in flour, then fry in hot oil until golden and cooked through.
2
Dress the shredded cabbage lightly to make a quick slaw.
3
Spread the raisin bread with tartar sauce.
✎ Chef’s note
Do not skip the raisin bread. Its faint sweetness against the savoury fried fish is the whole identity of the sandwich.
4
Pile on the fried fish, slaw, and sliced tomato, add hot sauce, close, and cut in half to serve.
✎ Chef’s note
A slice of cheddar laid on the fish straight out of the fryer, so it melts, is the other common build on the island. If you cannot find raisin bread, some cooks stir raisins into the slaw instead.
Bermudian lunch-counter tradition.

Hamilton. Sherry peppers began as ship's stores. Sailors steeped bird's eye peppers in fortified wine to make food past its best edible, and the bottle stayed on the table long after the reason for it had gone. Cassava pie at Christmas is documented on the island as far back as 1612.

Bermuda. Bermudian fish chowder takes no flour and no cream, and cooks are emphatic about it: the body comes from long reduction and from the gelatin in fish heads and bones. It is finished at the table with two things, black rum and sherry peppers, the latter descended from a sailors' habit of fortifying sherry with bird's-eye chillies.

North America. North America's table began with Indigenous foodways, the "three sisters" of corn, beans, and squash, plus chiles, tomatoes, and cacao, then layered on colonial, African, and immigrant influences. From Mexico's UNESCO-recognized cuisine to the Cajun and Creole pots of Louisiana and the fiery jerk of the Caribbean, the region turns ancient staples into something new. Barbecue, tacos, gumbo, and mole all carry stories of migration and adaptation.
The story behind this dish is up top, worth a read while the pot works.
