3 lb goat or beef, on the bone
2 tbsp salt
4 cups tomatoes and red onion (for kachumbari)
2 lime, juiced
1 chili, chopped
1 handful fresh cilantro
Instructions

Season the meat generously with salt and let it come to room temperature.

Grill slowly over charcoal, turning, until charred outside and tender within, about an hour.
