Fried bakes with zaboca is a simple, satisfying vegan breakfast from Dominica, the Nature Isle, that pairs the Caribbean's fried bread with the island's abundant avocados. Zaboca is the local word for avocado.
Bakes are soft rounds of dough fried until puffed and golden, crisp outside and pillowy within. They are split open and filled with seasoned mashed avocado, brightened with a little lime, onion, and pepper, so the cool, creamy zaboca melts into the warm bread.
Cheap, plant-based, and genuinely satisfying, it makes the most of what grows readily on the island. Fried bakes with zaboca is unpretentious Dominican morning food, of how far good bread and a ripe avocado can go.

Roseau. Dominica is steep, wet and forested, and the phrase for what grows there is ground provisions: dasheen, yam, tannia, breadfruit and green banana, boiled and serving as the bulk of a meal. River fish and crayfish come out of the many rivers running off the interior.
🗺️
Dominica. Dominica, the 'Nature Isle,' cooks close to the land: crab callaloo, made the official national dish in 2013, and one-pot stews rich with root vegetables and coconut. Fresh, green, and Creole, its table reflects a lush volcanic island.

North America. Almost every regional cooking here records who arrived and on what terms. Enslaved West Africans brought rice, okra, black-eyed peas and the techniques behind Lowcountry and Creole food; Chinese railway labour and later Italian, Jewish, Mexican and Vietnamese arrivals built the way the cities eat; and Indigenous foodways sit underneath all of it.
The story behind this dish is up top, worth a read while the pot works.
