Ingredients
Serves 4 —

1 small firm breadfruit
•
3 cups neutral oil, for frying
•
to taste salt
•
1 lime lime wedges, to serve
Instructions

Peel the breadfruit, quarter it, remove the core, and cut into thick wedges or slices.

Parboil the pieces in salted water for 8 minutes until just tender, then drain well and pat dry.

Heat the oil to 350°F and fry the breadfruit in batches until deep gold and crisp, about 4 minutes.

Drain, salt generously, and serve hot with lime wedges and a cup of São Tomé coffee.
