2 lb beef chuck, in cubes

1 cup unsweetened shredded coconut, toasted
6 shallots
6 cloves garlic
2 inch piece ginger
2 inch piece
4 stalks , sliced
8 dried red chilies, soaked
1 tbsp ground coriander
1 tsp ground turmeric
4 kaffir lime leaves, torn
2 tbsp paste
2 tbsp palm sugar
3 tbsp

Instructions

Toast the shredded coconut in a dry pan until golden and fragrant, then set aside.

Blend the shallots, garlic, ginger, galangal, lemongrass, soaked chilies, coriander and turmeric into a smooth paste.

Fry the paste in the oil for 8 to 10 minutes until aromatic and the oil separates, then add the beef and turn to coat.

Pour in the coconut milk, add the kaffir lime leaves, tamarind, palm sugar, toasted coconut and salt, and bring to a gentle simmer.

Simmer uncovered on low for 2 to 2.5 hours, stirring often, until the sauce is dark, thick and clinging and the beef is tender.
