1 1/2 cups (soaked dried, or canned and drained)
2 cups long-grain rice, rinsed
4 strips bacon, chopped
1 onion, diced
1/2 green bell pepper, diced
1 stalk celery, finely chopped
2 tbsp tomato paste
5 sprigs fresh thyme
2 cloves garlic, minced
1 tsp browning (or 1 tbsp sugar caramelised in the pot)
1 pepper, left whole
1 tbsp vegetable oil
to taste salt

In a heavy pot, cook the bacon in the oil over medium heat until the fat renders and it begins to crisp.

For the classic dark colour, let a tablespoon of sugar caramelise to a deep amber in the pot before the vegetables go in, or add a teaspoon of browning; this is what makes it peas 'n' rice rather than plain rice.

Add the onion, bell pepper, celery, and garlic and saute until softened, about 5 minutes.

Stir in the tomato paste, thyme, and browning and cook for 2 to 3 minutes until darkened and fragrant.

Add the pigeon peas and about 4 cups water, drop in the whole scotch bonnet, and bring to a boil. Season with salt.

Stir in the rice, return to a boil, then cover tightly and simmer on low for about 20 to 25 minutes until the liquid is absorbed. Lift out the pepper, rest 10 minutes, and fluff before serving.
