Firni is a beloved milk pudding across Afghanistan and the wider region, especially associated with Eid, weddings, and celebrations. Smoother and more delicate than a whole-rice pudding, it has a refined, silken texture that sets it apart.
Its secret is a fine starch, cornstarch or very finely sifted rice flour rather than whole grains, which dissolves completely into the milk to make a pudding as smooth as custard. It is gently sweetened and perfumed with and rose water, then set in shallow dishes and chilled. Decorated with slivered pistachios and almonds and sometimes edible silver leaf, it is elegant, fragrant, and cooling.

Ingredients
Serves 6
4 cups whole milk
5 tbsp cornstarch
1/2 cup sugar
1 tsp ground
1 tbsp rose water
1/3 cup slivered pistachios and almonds
Instructions
1
Whisk the cornstarch into 1 cup of the cold milk until smooth.
2
Heat the remaining milk with the sugar and cardamom, then whisk in the cornstarch slurry and cook, stirring, until thick and smooth.
✎ Chef’s note
Whisk constantly as it thickens so the starch cooks into a silky pudding without a single lump.
3
Stir in the rose water, then pour into shallow dishes.
4
Chill until set and decorate with slivered pistachios and almonds.
Afghan celebration tradition.

Kabul. The meal is built around bread and tea. Naan is slapped against the wall of a tandoor and carried home long and flat, and green tea is poured before, during and after everything else. Kabuli palaw, rice with carrot and raisin over lamb, is the dish put out for guests rather than the ordinary weekday plate.
🗺️
Afghanistan. Fruit is what the country grows best when it is allowed to. Kandahar's pomegranates are famous inside Afghanistan and out, and the province's grape orchards run to tens of thousands of hectares, with roughly half the harvest dried into raisins. Dried fruit and nuts are both a winter pantry and an export, which is why a bowl of them appears with tea before anything else does.
🌍
Asia. Fermentation is the thread that runs the whole way across: soy sauce and miso, Korean doenjang and kimchi, Southeast Asian fish sauces, the soured batter behind an idli. Chilli is the newcomer among them, arriving only after 1500 with Portuguese and Spanish traders, which makes the heat in Sichuan, Thai and Korean cooking far younger than the fermenting underneath it.
The story behind this dish is up top, worth a read while the pot works.
