Nhopi is a Shona comfort dish from Zimbabwe, made by cooking mashed pumpkin into mealie-meal, the maize meal that is the country's staple, then enriching it with dovi, peanut butter. A little sugar rounds it out, leaving it gently sweet and nutty.
It is eaten across Zimbabwe as a warming breakfast or a soft accompaniment to greens, and it turns a humble pumpkin into something rich. Every family judges its nhopi by how smooth and comforting the mash turns out.

Ingredients
Serves 4
800 g pumpkin, peeled and cubed
1/2 cup mealie-meal (fine cornmeal)
3 tbsp smooth peanut butter
1 tbsp, or to taste sugar
about 2 cups water
a pinch salt
Instructions
1
Simmer the pumpkin in a little water until soft, about 20 minutes, then mash it smooth in the pot.
2
Sprinkle in the mealie-meal a little at a time, stirring hard, and cook 10 minutes until it thickens into a soft porridge.
✎ Chef’s note
Add the mealie-meal in a steady stream while stirring so it swells smoothly with no raw lumps.
3
Stir in the peanut butter (or sunflower seed butter), sugar and a pinch of salt until glossy.
4
Loosen with a little water to a soft, spoonable texture and serve warm.

Harare. Sadza is made from maize, which is newer here than it tastes. Maize reached the region in the sixteenth century but only displaced finger millet, sorghum and pearl millet as the everyday grain during the twentieth, pushed by colonial milling and marketing. Those small grains are being planted again now for their drought resistance.
🗺️
Zimbabwe. Maize is not the old grain here. Sadza is made from it now, but sorghum and rapoko millet were the staples before colonial agriculture pushed maize forward, and they are still ground for porridge and brewed for traditional beer. What goes with sadza is muriwo, the relish, usually greens cooked down with tomato and onion.

Africa. Africa's fifty-four nations hold cuisines as different as Morocco's slow-cooked tagines and South Africa's open-fire braai, yet shared threads run through them: ancient grains like millet, sorghum, and teff; stews thickened with groundnut, okra, or palm; and fiery condiments from Tunisian harissa to Ethiopian berbere. Staple starches, fufu, injera, ugali, couscous, anchor communal meals often eaten by hand from a shared dish, where hospitality is a point of honor.
The story behind this dish is up top, worth a read while the pot works.
