Nyama ne sadza, meat with sadza, is the everyday cornerstone of Zimbabwean eating, the meal that anchors family lunches and dinners across the country. Sadza, the stiff maize-meal porridge, is the national staple, and a savoury meat stew is its most classic partner.
Beef is browned and simmered slowly with onion, tomato, and a little garlic and into a rich, thick gravy. The sadza is cooked from white maize meal and water, stirred vigorously until smooth, thick, and stiff enough to scoop and shape by hand. You pull off a piece of sadza, form a little scoop, and use it to gather up the meat and gravy, a satisfying, communal, hands-on meal.

Harare. Harare's tables are built on sadza, a stiff white maize porridge eaten by hand and pressed into relish. Alongside it come slow-cooked beef stew, peanut-buttered greens, and muriwo, the leafy garden vegetables that give the meal its balance.

Zimbabwe. Peanut butter is used as a cooking fat and a thickener rather than a spread, stirred into greens, pumpkin leaves and porridge, and it is the base of dovi, the peanut stew. Madora, the mopane worm, is dried and rehydrated or fried and eaten as a protein-dense snack, and it is farmed and traded seriously rather than as a curiosity.

Africa. Much of what reads as timeless African cooking is younger than the Atlantic crossings. Maize, cassava, groundnut, chilli and tomato all arrived from the Americas after 1500 and pushed older crops aside; millet, sorghum, teff, yam and fonio are the ones that were already here, and the map still shows the join.
The story behind this dish is up top, worth a read while the pot works.
