Kotleta po-kyivsky — Chicken Kyiv — is Ukraine's most famous dish abroad, a pounded chicken fillet wrapped around a nub of garlic-and-herb butter, breaded, and fried until the butter melts into a hidden fountain. The dramatic spurt of green butter at the first cut is the whole point.

Ingredients
Serves 4
4 chicken breasts, pounded thin
6 tbsp butter, softened with garlic and herbs
2 cups breadcrumbs
2 + 1/2 cup egg + flour (to coat)
as needed oil for frying
to taste salt
Instructions

Roll the garlic-herb butter (or plant butter) into a log and freeze until firm.

Place a piece of firm butter on each pounded fillet (or seitan cutlet) and roll up tightly, sealing the ends.

Coat each roll in flour, then egg (or plant-milk slurry), then breadcrumbs — twice for a good seal.

Chill 30 minutes, then fry (or bake at 400°F) until deep golden and cooked through.

Rest briefly and serve — cut in to release the herb butter.
