4 tbsp dark-roast ground Timorese coffee
4 cups water
3 tbsp sugar, to taste
Instructions

Bring the water to a near-boil.

Stir in the ground coffee and simmer gently for 4 minutes, letting the grounds swirl.

Take off the heat and let the grounds settle for 2 minutes.

Sweeten to taste and pour carefully into cups, leaving the grounds behind.
