Pepper soup is a thin, clear and very spicy broth, made with goat, chicken, fish or assorted meats, and goat meat pepper soup, called nwo-nwo or ngwo-ngwo among the Igbo, is one of the best loved. It carries no oil and no thickener; its character comes from chili and from pepper soup spice, a blend of West African aromatics such as calabash nutmeg, uda pods and alligator pepper, with fragrant uziza or scent leaves added at the end.
It is served as an appetiser at official gatherings and parties, in small bowls before the main meal, and is a fixture of Nigerian bars, where it is eaten with a cold beer or palm wine. It is also a comfort food: many Nigerians reach for it when they have a cold, and in Lagos families it is made for birthdays, rainy days and Christmas.
As a starter it is served on its own; as a meal it comes with boiled yam, , rice or agidi.

Metric
Serves 6
- 1 kg (2.2 lb) bone-in goat meat, cut into small chunks
- 1 large onion, grated or blended
- 1 to 2 peppers, blended, or left whole for less heat
- 1 cube
- 1 tsp salt, or to taste
- 1.5 litres (6 cups) water
- 2 tbsp Nigerian pepper soup spice (calabash nutmeg, uda, alligator pepper and others)Hard to find? 2 tbsp a mix of ground nutmeg, black pepper, a little ground cloves and a little dried thyme - a rough stand-in; the smoky, resinous notes of uda and calabash nutmeg have no true replacement
- 2 tbsp ground crayfish
- a handful uziza leaves or scent leaves (African basil), shreddedHard to find? a handful fresh basil leaves with a pinch of black pepper
Instructions
- 1Wash the goat meat well and put it in a large pot with the onion, the stock cube, the salt and the Scotch bonnet. Cover and cook over medium heat for 10 minutes, stirring once, so the meat steams in its own juices and takes in the seasoning.
- 2Pour in the water, bring to the boil, then lower the heat and simmer, covered, for 40 minutes, until the meat is nearly tender. Top up with a little hot water if it reduces too much.
- 3Stir in the pepper soup spice and the crayfish and simmer for 8 minutes more, until the meat is tender and the broth is fragrant.✎ Chef’s noteGoat varies a lot. Older goat can need another 20 to 30 minutes; keep simmering until a piece pulls easily off the bone.
- 4Add the shredded uziza or scent leaves, simmer for 2 minutes, taste for salt and heat, and serve very hot in small bowls.

Enugu (Southeast). Enugu is Igbo heartland in Nigeria's southeast, where egusi soup, thickened with ground melon seed and dark with bitterleaf, answers nearly every occasion. Pounded yam, fufu, palm oil, and smoked fish form the base, with ogbono and nsala as close rivals.
🗺️
Nigeria. Nigeria is West Africa's giant, and its kitchens argue passionately over jollof rice, the smoky tomato-and-pepper rice claimed across the region. Staples like pounded yam, egusi seed soups, suya spice, and fiery pepper sauces anchor a bold, communal table across more than 250 ethnic groups.
🌍
Africa. Much of what reads as timeless African cooking is younger than the Atlantic crossings. Maize, cassava, groundnut, chilli and tomato all arrived from the Americas after 1500 and pushed older crops aside; millet, sorghum, teff, yam and fonio are the ones that were already here, and the map still shows the join.
The story behind this dish is up top, worth a read while the pot works.
