Ingredients
Serves 4
1.5 cups
3/4 cup freshly grated coconut
1/4 cup sugar
1 tsp agar-agar powder
1 cup thick , well chilled
1 tsp (optional) vanilla
Instructions

Warm the coconut milk, grated coconut and sugar in a saucepan over medium heat, stirring, until the sugar dissolves.

Whisk in the agar-agar and let it simmer gently for 2 minutes, then stir in the vanilla.

Take off the heat and let the mixture cool until it is thick but not yet fully set.

Whip the well-chilled coconut cream to soft peaks in a separate bowl.

Fold the whipped coconut cream gently through the cooled coconut base until even and airy.

Spoon into small cups and chill until set, at least 2 hours, then serve cool.
