Glass of milky drink with basil seeds and jelly
🇲🇺 Port Louis
Alouda is Mauritius's answer to falooda, a legacy of Indian migration: cold sweetened milk thickened with soaked basil (tukmaria) seeds and cubes of agar jelly, perfumed with vanilla or almond syrup. Sold from iconic stalls at Port Louis market, it is slurped through a wide straw on hot days.
