Thick okra stew with fish and meat over rice
🇬🇲 Banjul
Superkanja is a Gambian Sunday favorite, a thick okra stew darkened with red palm oil and layered with fresh and smoked fish alongside meat. The okra gives it a signature silky body, and it is served in a generous mound over white rice, a dish that anchors family gatherings along the river.
