Golden saffron pancakes with date syrup
🇧🇭 Manama
Chebab are the golden breakfast pancakes of the Gulf, a batter perfumed with saffron and cardamom (and often rosewater) cooked into soft, fragrant rounds. In Bahrain they are folded with a slice of cheese or drizzled with date syrup and honey, and eaten warm with a cup of spiced karak tea.

Ingredients
Serves 4
2 cups flour
1 egg
a pinch saffron
1 tsp cardamom
1 tsp rosewater
1 tsp yeast
2 tbsp sugar
as needed warm water
Instructions

Bloom the saffron in a little warm water.

Whisk the flour, egg (or extra flour), yeast, sugar, cardamom, rosewater, and saffron water into a batter; let it foam.

Pour rounds onto a hot dry pan.

Cook until the tops set with little holes, then flip briefly.

Serve warm with cheese or date syrup and karak tea.
