10 oz fresh kava root, cleaned and scraped
Hard to find? 1/2 cup dried kava root, ground to powder - fresh root is the Vanuatu way and hits harder; dried powder is easier to find abroad and gives a milder shell
3 cups cool water
1 per person a slice of fresh fruit, as a chaser (optional)

Cut the cleaned fresh root into small pieces, then grind or pound them to a wet, fibrous pulp.

Breaking down the fibres is the whole job: it releases the insoluble kavalactones so they can emulsify into the water.

Gather the pulp into a cloth and set it in a bowl with the cool water.

Knead and wring the bundle underwater for several minutes until the water turns grey-brown and cloudy.

Wring the cloth out fully and discard the spent fibre.

Serve in a coconut-shell cup and drink each shell in one go. Kava is non-alcoholic but strongly psychoactive here, so do not mix it with alcohol or drive afterward.

Efate (Port Vila). Vanuatu is a chain of more than eighty islands and the pantry is whatever grows on volcanic soil and whatever the reef gives up: taro, yam, breadfruit, coconut and fish. Kava, pounded from a pepper root, is drunk at dusk in nakamals rather than with a meal, and it is not alcohol.
