Rooibos — "red bush" — grows only in South Africa's Cederberg mountains, and its sweet, earthy, caffeine-free brew is a national treasure. Steeped strong and served over ice with lemon and mint, it makes a refreshing iced tea enjoyed across the country in the summer heat.

Ingredients
Serves 4
4 rooibos tea bags (or loose)
5 cups water
1/4 cup sugar (or agave)
1 lemon
a handful fresh mint
Instructions

Boil the water and steep the rooibos for a good 8–10 minutes to draw out its full color and flavor.

Stir in the sugar (or honey) while the tea is hot so it dissolves completely.

Squeeze in the lemon and drop in the mint, then let it cool to room temperature.

Chill well and serve over ice with extra lemon and mint.
