2 cups flour (for the puri)
1 cup (for the halwa)

3 cups cooked chickpeas with spices (chana)
3/4 cup sugar
1 tsp
2 tbsp raisins
1/4 cup slivered almonds and pistachios

Instructions

Make a stiff dough for the puri; roll into small rounds and deep-fry until puffed and golden.

For the halwa, first dissolve the sugar and cardamom in water and bring it to a boil, then keep the syrup hot while you roast the semolina in ghee (or oil) for a good ten minutes until it is deep golden and smells nutty; pour the HOT syrup into the hot semolina in a steady stream, standing back as it splutters, and stir hard until it thickens to a soft, glossy pudding.

Fold the raisins and most of the nuts into the halwa, and warm the chana, which is spiced with the pickling spices: fenugreek, fennel, cumin, mustard and nigella seeds with a little dried mango powder.

Plate the puri with the halwa and chana side by side.
