2 lb chicken pieces
3 cups basmati rice
3 dried black limes (loomi)
Hard to find? lime zest and a good squeeze of lime - sharpens the rice but loomi's dark fermented musk is its own thing; dried limes keep for years, so a bag from a Middle Eastern shop is a good investment
2 tbsp bezar or mixed Gulf spices
1 set cinnamon stick, pods, cloves, and a bay leaf
3 cups onion and tomato
2 tbsp garlic and ginger, minced
1 green chili
1 pinch , steeped
3 tbsp (or oil)
a handful fresh coriander, chopped
1/2 cup fried onions and raisins, to garnish
Instructions

Fry the onion in the ghee until golden, add the whole spices, then the garlic, ginger, and green chili, then the bezar and tomato, then the chicken, and brown it all together.

Add water and the pierced dried limes and simmer to a flavourful broth, then lift out the chicken.

Pierce the dried limes before they go in so they release their sour, smoky flavour into the broth.

Cook the rice in the broth until fluffy, folding saffron through near the end.

Return the chicken on top, cover to finish, then scatter with fresh coriander, fried onions, and raisins and serve on a platter with yogurt alongside.

Muscat. Shuwa is festival cooking only, never sold and never everyday. The meat, which may be goat, lamb, beef or camel, is rubbed with a heavy spice paste, wrapped in banana or palm leaves inside a woven sack, and buried in a communal sand pit on the first day of Eid to be dug out on the second or third.

Oman. Oman's kitchen faces the sea rather than the desert. Its sultans ruled Zanzibar from the early nineteenth century and moved the court there, developing the clove plantations that made the islands the world's leading producer, and the traffic ran both ways in rice, spice and technique. The dried lime called loomi, dropped whole into stews, is the shared marker across the whole Gulf.

Asia. Fermentation is the thread that runs the whole way across: soy sauce and miso, Korean doenjang and kimchi, Southeast Asian fish sauces, the soured batter behind an idli. Chilli is the newcomer among them, arriving only after 1500 with Portuguese and Spanish traders, which makes the heat in Sichuan, Thai and Korean cooking far younger than the fermenting underneath it.
