8 cups water
1/2 cup malt flour (mmera)
1/3 cup sugar, to taste
Instructions

Whisk the maize meal into 2 cups cold water, then cook into a thin porridge with 6 cups boiling water.

Cool the porridge to just warm, then stir in the millet malt flour.

Leave to ferment briefly, a few hours to overnight, until pleasantly tangy.

Sweeten to taste and serve warm or chilled, stirring before pouring.
