São Tomé and Príncipe

Africa · This week's dish comes from São Tomé

About São Tomé and Príncipe

São Tomé and Príncipe, the 'chocolate islands,' cook with cocoa, tropical fruit, and Atlantic fish, calulu stew, fried breadfruit, and palm-oil dishes. Portuguese-African roots define the equatorial island table.
Calulu is shared with Angola rather than being Sao Toemean alone, but the local version is specific: local leaves including mussua, otagi and guava sprouts, the small aubergine called maqueque, dried and smoked fish, palm oil, and grains of paradise in the seasoning, cooked down and served with a maize or banana funge.
The cocoa nickname is earned by history. In the early twentieth century these two small islands were among the world's leading cocoa exporters, worked on plantations under a labour system that drew international scandal, and the roças are still there, some of them derelict and some replanted for fine-flavour chocolate that is now made on the island rather than shipped raw.
The wider picture: Fifty-four countries of tagines, stews, and fire-kissed grills.
