Romania

Europe · This week's dish comes from Transylvania

About Romania

Romanian food is rustic and soulful, mămăligă (polenta), sarmale cabbage rolls, and pork in many forms, brightened by sour soups (ciorbă). Balkan, Ottoman, and Hungarian influences meet over the home hearth.
The sourness in a ciorba comes from bors, wheat bran left to ferment into a sharp liquid that is stirred in at the end, and it is what separates a ciorba from an ordinary soup. Mititei, skinless grilled meat rolls squeezed from a nozzle and eaten with mustard, are the distinctively Romanian item on any grill.
Mamaliga is a peasant staple that outlived its own necessity. Maize arrived through Ottoman channels and replaced millet, and the polenta made from it is still cut with a thread rather than a knife in some households, served with sheep cheese, soured cream and a fried egg. Sarmale are Ottoman in origin and shared across the Balkans rather than Romanian alone.
The wider picture: Village recipes guarded for generations.

3. Read the short story behind Omletă Țărănească. How have the people, trade routes, and history of Romania shaped what ends up on the plate there?
4. Compare Omletă Țărănească to a dish your own family cooks. What is similar, what is different, and what one question would you ask a family in Romania about how they make and share it?
5. After you cook Omletă Țărănească, add Romania to a classroom map and give it a stamp. Write down one fact about its food or geography that you did not know this morning.
