Ingredients
Serves 4 —

5 cups fresh coconut water (from green coconuts)
•
2 lime
•
a handful fresh mint
•
1 tbsp a little sugar (optional)
Instructions

Crack open the green coconuts and pour off the fresh water, straining out any fibers.

Muddle the mint gently with the lime juice to release its aroma.

Stir the lime-mint into the coconut water, sweetening lightly only if you wish.

Serve over plenty of ice with a wedge of lime.
