Serves 4
4 cups whole milk
3 tbsp live yogurt or cultured milk (starter)
1 pinch pinch of salt (optional)
Instructions

Warm the milk gently to just above body temperature, then let it cool to lukewarm.

Whisk in the live culture (yogurt) until fully blended.

Cover and keep warm 12–24 hours until thickened and pleasantly sour.

Stir smooth, chill, and serve cool — plain or with a tiny pinch of salt.
