Mahangu, or pearl millet, is the grain of northern Namibia, drought-hardy and deeply woven into Owambo life. Cooked soft for breakfast and served with omaere — a sharp, fermented cow's milk — it is a plain, grounding meal that has fed the region for generations.

Ingredients
Serves 4
1 cup pearl millet (mahangu) meal
5 cups water
2 cups omaere (fermented milk), to serve
to taste sugar or salt, to taste
Instructions

Whisk the mahangu meal into 1 cup of the cold water to make a smooth slurry.

Boil the remaining water, then stir in the slurry and simmer 15 minutes, stirring, until soft and thick.

Season to taste with a little sugar or salt depending on how you like it.

Spoon the warm porridge into bowls and pour over the cool fermented milk to eat.
