The frappé was invented by accident at a 1957 trade fair in Thessaloniki when a Nestlé rep, unable to find hot water, shook his instant coffee with cold water and ice. It became the emblem of the leisurely Greek café, nursed for hours over conversation in the summer heat.

Ingredients
Serves 1
2 tsp instant coffee
to taste sugar
2 tbsp + to fill cold water
a handful ice
a splash evaporated milk (optional)
Instructions

Put the coffee, sugar, and 2 tbsp cold water in a shaker or tall glass.

Shake hard (or froth) until a thick, pale foam forms.

Fill the glass with ice.

Top with cold water and a splash of milk if you like.

Serve with a straw and sip slowly.
