The Comoros are the "Perfume Islands," among the world's great producers of vanilla and ylang-ylang, and their coffee reflects it. Brewed strong and infused with a split vanilla pod and cardamom, café à la vanille is sweetened and sipped slowly — the aromatic heart of Comorian hospitality.

Ingredients
Serves 4
4 tbsp ground coffee
4 cups water
1 vanilla pod, split
4 pods cardamom
3 tbsp sugar
Instructions

Bring the water to a boil with the split vanilla pod and cracked cardamom.

Stir in the coffee and simmer gently 5 minutes so the vanilla perfumes the brew.

Sweeten to taste and let the grounds settle for a minute.

Pour through a strainer into small cups and serve hot and fragrant.
