Ingredients

1 cup millet flour
•
5 cups water
•
1 cup whole milk
•
3 tbsp sugar, to taste

1 pinch pinch of salt
Instructions

Whisk the millet flour into 1 cup of the cold water until there are no lumps — this slurry keeps the porridge smooth.

Bring the remaining 4 cups of water to a boil with the salt, then pour in the slurry in a steady stream, whisking.

Lower the heat and cook 15–20 minutes, stirring often, until thick, glossy, and no longer raw-tasting.

Stir in the milk and sugar, warm through, and serve hot in bowls while it still steams.
